Art of Palm Feni

The art of Toddy tapping or process of collecting the juice of Spadix, Palm tree flowers or ipoi in Konkani, is being practised in the Indian subcontinent for centuries. Coconut feni is a double distilled spirit. The first is the milder mollop, the second distil goes on to become the exotic fiery coconut Feni. The word Feni comes from the Sanskrit word ‘phena’ meaning the froth.
Palm Feni is produced round the year. During the monsoon months, the coconut palms produce more toddy than the drier months. Being labour-intensive and complicated this tradition like many is slowly losing its popularity, in turn leading to a dramatic decline in production of coconut Feni.
